1. What is the difference between ceremonial and culinary matcha?

True ceremonial matcha, such as Mary Rose Tenno, comes exclusively from the first spring harvest and is shaded for a very long time before the drying process. As a result, the leaves acquire a higher L-theanine content, which gives the infusion a subtle, naturally sweet flavour and a beautiful, noble green colour. A lower amount of catechins, in turn, means getting rid of astringent bitterness. Culinary matcha usually comes from later harvests and is shaded for a shorter time – it is characterised by a distinct, strong bitterness, which works perfectly as an addition to baked goods or milk-based drinks like matcha latte. For classic drinking with water, we recommend exclusively ceremonial quality.

2. What accessories are needed to brew ceremonial matcha?

To fully enjoy the smooth, creamy consistency of matcha tea, we recommend using traditional Japanese accessories. The essential item is a bamboo whisk (chasen), which allows you to properly whisk the powder in water and achieve the characteristic, thick foam. Also helpful are: a matchawan (a wide, specially shaped bowl that makes whisking easier) and a chashaku (a bamboo scoop used to perfectly measure the tea). Although you can use a regular electric milk frother, the traditional ritual is a huge part of the philosophy and pleasure derived from drinking matcha.

3. Does ceremonial matcha stimulate, and can it replace coffee?

Definitely yes! Matcha is an excellent alternative to coffee. Due to the fact that when drinking matcha we consume whole ground tea leaves, we provide the body with a solid dose of caffeine.
