Mary Rose – Purple Matcha Ube – a purple alternative to classic matcha tea 💜
Purple Matcha Ube by Mary Rose is a unique powder made from 100% purple yam – ube (Dioscorea alata). Although powdered ube is often referred to as “purple matcha”, it is not tea – it is a natural plant-based ingredient that captivates with its rich colour and versatile uses.
The flavour of ube is mild and naturally sweet, with subtle notes of vanilla, nuts and baked sweet potato. 🍠 It works perfectly as a base for a vibrant ube latte, as well as a colourful addition to smoothies, porridge and desserts.
What is ube and where does the term “purple matcha” come from? 🍵✨
Ube, also known as purple yam, is a purple root originally from the Philippines, often confused with taro – although they are completely different plants. Purple yam stands out for its deep, intense colour and sweeter, dessert-like flavour profile.
Once dried and ground, ube becomes a fine powder. The term purple matcha refers to its form and method of preparation – similarly to matcha tea, ube is mixed into liquid and whisked to create a smooth, colourful drink. Unlike classic matcha, Purple Matcha contains no caffeine, making it suitable to enjoy at any time of day.
It is also worth noting that purple yam is a natural source of fibre and plant compounds that form a valuable element of a balanced diet – 100% natural, enjoyable in taste and visually striking. 💜

How to prepare a drink with Mary Rose Purple Matcha ☕
Purple Matcha Ube is prepared in a similar way to classic matcha tea, but it requires thorough mixing. Purple yam (ube) contains natural starch, which may cause the powder to settle.
- Add approx. 2 g of powder (a slightly heaped half teaspoon) to a bowl.
- Pour over 100 ml of hot water (90-95°C).
- Mix thoroughly using a chasen whisk or a milk frother until a smooth consistency is achieved.
- Add more water or pour in plant-based milk – oat, coconut or almond – to create a purple latte.
Note: After a short while, a delicate sediment may appear at the bottom of the drink – this is a natural characteristic of ube.
A drink prepared with purple matcha delights with its intense colour. After adding warm milk and whisking again, a light, fluffy purple foam forms – perfect as the top layer of an eye-catching two-tone latte combined with classic green matcha. 💫
