Thanks to Mary Rose's cooperation with a small Brazilian entrepreneurs, we have been able to introduce these specialty coffees (SSFC - Strictly Soft Fine Cup) to the market and to our shop. Mary Rose is a brand of high quality coffees made from specially selected coffee beans grown on a plantations by master craftsmen who know the secrets of coffee growing and how to extract the best from the plant. Coffee beans are processed in a natural way - they are dried without the use of water, in the sun. They are roasted at a small, local coffee roastery based in eastern Poland, according to an innovative and extremely versatile method called omniroast. This makes it possible to prepare the brew in any way you like - with professional equipment, at home or using alternative methods.

The Mary Rose Mogiana coffee bean grows in the Mogiana region of Brazil, located in the northeastern part of the state of São Paulo. The coffee crop is located at an altitude of around 900-1000 metres above sea level, which has a huge impact on the taste and texture of the beans - they are light, softer and more porous, with less acidity. The Mogiana coffee beans are large, graded 17/18. This is a blend of three varieties of beans: Bourbon, Catuai and Mundo Novo. The brew is characterised by a slight sweetness in taste and aroma, with delicate hazelnut, chocolate and milk notes.

All Mary Rose coffees are characterised by a degree of roasting named omniroast. This means that they are versatile, placed somewhere between light and dark coffees, combining the characteristics of these two types, and are suitable for brewing by almost any method - espresso machine, drip coffee maker, stovetop cafetiere or alternative methods like coffee cone, siphon, chemex, french press or aeropress.

How is Mary Rose coffee made?
Step 1: Mary Rose coffee grows on Brazilian plantations. The coffee fruits are hand-picked by the plantators and carefully selected. From the sun-dried berries, the green, raw coffee beans are extracted and set off on their long journey to the roastery.
Step 2: Small batches of coffee are roasted in a special oven, where temperatures reach up to 250 °C! The beans rotate in the machine and crack under the heat. They roast for a few minutes. The small scale of production is reflected in the high quality of the coffee that is produced under the Mary Rose brand.
Step 3: While coffee beans are roasting, the coffee master waits for the right moment to remove the beans from the roaster, checking them every few moments to see if they have the perfect colour, size, texture or smokiness.
Step 4: The coffee is poured through a special door into a rotating drum - cooling tray equipped with arms that distribute the beans evenly. The roasting process stops and the beans are instantly cooled.
Step 5: Freshly roasted Mary Rose coffee is packed in a special packaging to retain their unique aroma and flavour. The finished product goes to your kitchen shelf!
